Red and Black Teas
Chinese Red and Indian Black Teas are essentially the same, both are fully fermented and make up the majority of Teas drunk in Britain today.

Assam makes up about half of all the tea grown in India. Here, for a change is a very high quality tea from a single estate. Full bodied, malty, rounded and smooth.

Assam: Decaffeinated. T.G.F.O.P, £6.20 for 50g
This special tea takes a full Assam and it is then put through the Swiss Water method to extract the caffeine. This ensures that almost nothing of the original is lost in terms of flavour and taste.

A large leaf tea from Sri Lanka (formerly known as Ceylon). Bright colour and good flavour.

Darjeeling: Castleton Estate F.T.G.F.O.P, £4.90 for 50g
Established in 1885, the estate is located near Kurseong (White Orchid) in northern India and is considered to be one of the best in Darjeeling.
A very fine afternoon Tea with Classical muscatel notes and a very light astringency.
Harvested in June, this second flush is much more complex than the first and is often referred to as the Champagne of Teas.

This was the base for the original 'Breakfast Tea'. A superb Red Tea originating from the Anhui district in Eastern China.

Nilgiri: Thiashola. S.F.T.G.F.O.P, £3.80 for 50g
A single estate tea from Thiashola Garden in the Nilgiri (Blue Mountain) region in Southern India produces a tea with body , but not quite as much as an Assam, and the briskness of a Ceylon.
